Ingredients:
- 500g mixed vegetables (carrots, cauliflower, green chilies, raw mango)
- 2 tbsp salt
- 2 tbsp turmeric powder
- 4 tbsp fennel seeds (saunf)
- 4 tbsp mustard seeds (rai), coarsely ground
- 2 tbsp fenugreek seeds (methi)
- 2 tbsp nigella seeds (kalonji)
- 2 tbsp red chili powder
- 1 cup vinegar
- 1 cup Kachchi Ghani Mustard Oil (Use AL-QADEEM Kachchi Ghani Mustard Oil for authentic flavor and preservation)
Instructions:
Step 1:
Wash and dry the vegetables thoroughly. Cut them into bite-sized pieces.
Step 2:
In a large bowl, mix the vegetables with salt and turmeric powder. Spread them on a clean cloth and let them dry in the sun for 4-5 hours until they are slightly wilted.
Step 3:
In a dry pan, roast fennel seeds, mustard seeds, fenugreek seeds, and nigella seeds for 2-3 minutes until fragrant. Allow them to cool and then grind them coarsely.
Step 4:
In a large mixing bowl, combine the sun-dried vegetables, roasted spice mix, and red chili powder. Mix well.
Step 5:
Heat 1 cup of AL-QADEEM Kachchi Ghani Mustard Oil in a pan until it reaches smoking point. Allow it to cool slightly.
Step 6:
Once the oil is warm, pour it over the vegetable and spice mixture. Add vinegar and mix everything thoroughly.
Step 7:
Transfer the pickle to a clean, dry jar. Seal the jar tightly and place it in a sunny spot for 2-3 weeks, shaking the jar occasionally to mix the contents.
Step 8:
Once the pickle has matured and absorbed all the flavors, it is ready to be served. Store it in a cool, dry place and enjoy it with your favorite meals.
